5 Months Pregnant!!!
Hey everyone!
Saturday marked 5 months pregnant for my husband, baby and I! We found out at the end of July that we will be having a baby GIRL and we could not be more excited! She is already loved by so many. We are so thankful for this amazing oppurtunity, as my she will be our first baby. My husband and I had actually been trying for awhile, when the Lord saw fit to answer our long time dream(prayer).
That is where I have been. I have been on cloud 9, doing all the things it takes to get ready for our precious Princess! Time has gone by so fast in these 5 months, I'm treasuring every minute of this pregnancy. I have been tryly blessed to have a great pregnancy thus far. I absolutely LOVE being pregnant. It is the greatest feeling in the world.
I could go on and on about pregnancy, and our baby girl but I'll get to baking. I still bake, b/c it's my passion and my therapy. It's been so hot here, that I find myself not wanting to turn on the oven. I plan to get back to this blog and baking now that it looks like the weather might be out of the 100's for a few days. Last night it was an amazing 71* and my husband and I had to ride with the windows down and enjoy the fall-like weather.
Ok, well I hope everyone is doing well. I will leave you with a few pictures. We've been taking a picture every week since week 5/6 to show our progress. It so much fun! Here is my latest picture!

Exciting announcement!
With the birth of my sweet nephew, my brother graduating college, and life, I've kind of neglected my little blog. I hope to be back to it soon but in the meantime wanted to announce, after a long year of trying...My husband and I our expecting our first baby at the beginning of next year! We couldn't be more happy : )

I'm back!
I should be back starting next week. My sister had her baby at he beginning of the month and I have been with her everyday helping take care of my sweet nephew as well as taking them to doctor's appointments and running errands. I've still been baking and cooking and can't wait it get my camera back(I let my sister borrow it) so I an get back to blogging!

Pumpkin Spice Rice Crispy Treats!
Oh my goodness! I went to Walmart a few weeks ago. When I came home I got the mail and there was a Walmart ad in the paper. In the ad there were Pumpkin Spice Marshmallows. Oh my, I had to go back and get some.
This past weekend, we went back to Walmart and I picked up a bag of these jewels. On the way home, I was talking to my husband, when a light bulb went off. I know what I'm going to make with these...Pumpkin Rice cripsy treats. He was like good idea. So I got home and whipped these babies right up.
Man are they delighful. You must try them. Not only are they the perfect hint of pumpkin. They're a rich burnt orange color(hook 'em) and the little marshmallows are in the shape of pumpkins!!
P.S. I totally came up with the recipe myself and when I went to throw away the empty bag of marshmallows there was a recipe similar on the back :/ Oh well, I promise I really came up with it myself (:

Smores Cookies
I'm on a Smores kick, and I don't think I'm the only one. I've found several recipes on my new found love, Pinterest (follow me)! I came across this recipe and wanted to try it.
I really enjoyed these cookies. One thing that I didn't really like was that the marshmallows didn't melt, per say. They were more of a fluffy feeling, and left air pockets in the cookies. Any idea as to why that happened? Either way they were great. Give the recipe a try!

Mini Applesauce Cupcakes
Recently, I read , check her blog out if you haven't yet. It's wonderful. In her recent posts she's been making goodies using her BabyCakes cupcake maker. I got one of these for Christmas from my sweet aunt Tammy. After reading her blog, I had to get mine out and start cookin' up some goodies, myself.
I decided to take a look through the little instruction/cookbook that comes with it. I came across this recipe, one night while i was cooking dinner. It looked quick and easy, so i tried it!
These little cupcakes are delicious. I tweaked the recipe alittle, for the ingredients I had on hand. I also didn't have my camera with me so I didn't get to snap any pictures.

PS. Say a prayer for my momma, and myself. We both are waiting on some results from medical test that we both had done. I appreciate it. This year has been crazy, and I can't wait for some cooler weather, the Holidays, and some good news!!!
After School Applesauce Cupcakes
1 cup AP Flour
2/3 c packed brown sugar
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 individual (4oz) container of applesauce or 1/2cup- - this is where I used sugar free. Believe it or not, it was very good!
2tbsp vegetable oil
2tbsp water
1 1/2 tsp cider vinegar
1/3c choppped pecans, toasted. I skipped the toasting and used walnuts. (:
Mix all ingredients together, and fill baking cups and bake for 5 minutes. (If you're using a Babycakes maker)

Molten Chocolate-Nutella Pudding Cakes
Nutella is totally in right now. I've seen so many people obsessed with it on blogger and so many different recipes from crepes to cookies. I, agree with the fad and totally love it. I came across this recipe in AllYou and knew I had to try it. You should to. You won't be sorry.
Nutella Pudding Cakes
1/2 cup AP flour
1/2 cup unsweetened cocoa
1/2 tsp baking powder
4oz. semisweeet chocolate, finely chopped(i used chocolate chips, they work great)
8 tbsp(1 stick) unsalted butter, cut into pieces.
4 large eggs
1 tsp vanilla extracct
1 cup sugar
1/4 tsp salt
6 tbsp nutella
Preheat oven to 350. Mist 6-6oz. ramekins with cooking spray. Place a raosting pan in the oven; pour in 1/2in water. In a bowl, whisk flour, cocoa and baking powder.
Combine chocolate and butter in a microwave-safe bowl; cook on high, stirring once or twice, until almost melted, 1 to 2 minutes. Whisk until smooth.
In a bowl, with an electric mixer on medium-high speed, beat eggs, vanilla, sugar and slat until pale yellow, about 5 minutes. Beat in melted chocolate mixture. Stir in flour mixture. Spoon half of batter into ramekins. Drop 1 tbsp of Nutella into center of each. Cover with remaining batter.
Transfer ramekins to roasting pan. Bake until cakes have risen and are cracked on top, about 30 minutes. Let cool for 5 minutes. Serve warm.
This little cakes are a little time consuming, but definitely worth it. (:
