Pumpkin Spice Rice Crispy Treats!

Oh my goodness! I went to Walmart a few weeks ago. When I came home I got the mail and there was a Walmart ad in the paper. In the ad there were Pumpkin Spice Marshmallows. Oh my, I had to go back and get some.

This past weekend, we went back to Walmart and I picked up a bag of these jewels. On the way home, I was talking to my husband, when a light bulb went off. I know what I'm going to make with these...Pumpkin Rice cripsy treats. He was like good idea. So I got home and whipped these babies right up.




Man are they delighful. You must try them. Not only are they the perfect hint of pumpkin. They're a rich burnt orange color(hook 'em) and the little marshmallows are in the shape of pumpkins!!





P.S. I totally came up with the recipe myself and when I went to throw away the empty bag of marshmallows there was a recipe similar on the back :/ Oh well, I promise I really came up with it myself (:

Smores Cookies

I'm on a Smores kick, and I don't think I'm the only one. I've found several recipes on my new found love, Pinterest (follow me)! I came across this recipe and wanted to try it.




I really enjoyed these cookies. One thing that I didn't really like was that the marshmallows didn't melt, per say. They were more of a fluffy feeling, and left air pockets in the cookies. Any idea as to why that happened? Either way they were great. Give the recipe a try!

Mini Applesauce Cupcakes

Recently, I read , check her blog out if you haven't yet. It's wonderful. In her recent posts she's been making goodies using her BabyCakes cupcake maker. I got one of these for Christmas from my sweet aunt Tammy. After reading her blog, I had to get mine out and start cookin' up some goodies, myself.

I decided to take a look through the little instruction/cookbook that comes with it. I came across this recipe, one night while i was cooking dinner. It looked quick and easy, so i tried it!

These little cupcakes are delicious. I tweaked the recipe alittle, for the ingredients I had on hand. I also didn't have my camera with me so I didn't get to snap any pictures.

PS. Say a prayer for my momma, and myself. We both are waiting on some results from medical test that we both had done. I appreciate it. This year has been crazy, and I can't wait for some cooler weather, the Holidays, and some good news!!!

After School Applesauce Cupcakes

1 cup AP Flour
2/3 c packed brown sugar
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 individual (4oz) container of applesauce or 1/2cup- - this is where I used sugar free. Believe it or not, it was very good!
2tbsp vegetable oil
2tbsp water
1 1/2 tsp cider vinegar
1/3c choppped pecans, toasted. I skipped the toasting and used walnuts. (:

Mix all ingredients together, and fill baking cups and bake for 5 minutes. (If you're using a Babycakes maker)

Molten Chocolate-Nutella Pudding Cakes

Nutella is totally in right now. I've seen so many people obsessed with it on blogger and so many different recipes from crepes to cookies. I, agree with the fad and totally love it. I came across this recipe in AllYou and knew I had to try it. You should to. You won't be sorry.

Nutella Pudding Cakes

1/2 cup AP flour
1/2 cup unsweetened cocoa
1/2 tsp baking powder
4oz. semisweeet chocolate, finely chopped(i used chocolate chips, they work great)
8 tbsp(1 stick) unsalted butter, cut into pieces.
4 large eggs
1 tsp vanilla extracct
1 cup sugar
1/4 tsp salt
6 tbsp nutella





Preheat oven to 350. Mist 6-6oz. ramekins with cooking spray. Place a raosting pan in the oven; pour in 1/2in water. In a bowl, whisk flour, cocoa and baking powder.
Combine chocolate and butter in a microwave-safe bowl; cook on high, stirring once or twice, until almost melted, 1 to 2 minutes. Whisk until smooth.
In a bowl, with an electric mixer on medium-high speed, beat eggs, vanilla, sugar and slat until pale yellow, about 5 minutes. Beat in melted chocolate mixture. Stir in flour mixture. Spoon half of batter into ramekins. Drop 1 tbsp of Nutella into center of each. Cover with remaining batter.
Transfer ramekins to roasting pan. Bake until cakes have risen and are cracked on top, about 30 minutes. Let cool for 5 minutes. Serve warm.

This little cakes are a little time consuming, but definitely worth it. (:
I've heard about this recipe a few times and I had actually tried it before I made it. My sister made it one Sunday afternoon and my husband loved it so i knew i had to make it.

I kind of forgot about it, until I came across it in a recipe book I got as a gift. This is the perfect summer dessert. You got to try it (:

Norma's Pretzel Salad


CRUST

2 cups crushed pretzels
3/4 cup melted butter
3 tsp sugar

FILLING

1 (8 oz) cream cheese
1 cup sugar
1 medium size Cool Whip


TOPPING

1 (6 oz) box strawberry Jello
2 (10 oz) frozen strawberries
2 cups boiling water

Mix crushed pretzels, sugar, and melted butter.
Press into a 9 x 13 glass dish. Bake at 400 degrees F
for 8 minutes. Cool completely.




Mix together cream cheese and sugar until smooth.
Fold in Cool Whip. Spread on top of cooled pretzel
crust.




Dissolve Jello in boiling water, add frozen strawberries
(water will melt them) Let stand for 10 minutes.

Yumilicousness(:

This past weekend we had a bake sale at our church. I had totally forgotten about it until Saturday afternoon so I didn't have time to make anything from scrath, as I would have liked. I ran some errands with my momma and I picked up a lemon bar mix(my sister's fav) and a Chocolate Chip Brownie-Cookie mix(half brownie/half cookie).

Orginally, I wanted to make the homemade Nutella Twix bars that Savory Sweet Life made here, but as I stated above, I didn't have enough time to make enough for the bake sale. After whipping up those mixes, I decided I had enough time to make just two of the twix for my hubby and I to try. Boy, were they a hit. My husband raved, and raved about them (:

Needless to say, if you get a chance you definitely want to try this treat.

* Instead of using pretzels, I used those new Wheat Thin Honey Wheat Stix, awesome subsitute in my opinion, even though their close to the same taste, and I used Semi-Sweet Chocolate Chips to dip them in.*

I'm on a mission to find a recipe for homemade Almond Joy Bars ; )

Mug Cakes

I've always wanted to try a mug cake. Who doesn't love cake? A cake that takes literally 5 minutes is awesome. I saw this recipe on THIS BLOG and knew I had to try it. I made these for my husband and I last night after dinner and I really liked it. I hope you'll give it a try ; )

Homemade Granola & Peppermint Patties

This weekend I was bound and detemined to bake. It's been so long with the crazniess we've had this new year, that I told myself, no matter what I'm going to bake. Baking is not only a big passion of mine, but also therapy. I love it. So every since Amanda at I am Baker posted a recipe for Peppermint patties, I knew I had to try this recipe. So friday night I finally had all of the ingredients and decided to whip some up. Warning, they do take a little bit of time. Don't make them in a time crunch. I made some and let them sit while my husbie and I watched a movie. As soon as the time went off, I ran in the kitchen grabbed one, took a bite, and sighed.."That's where it is". My husbie said what? I said you have to try these. He tried them and at first he wasn't that into them, he thought they were a little too sweet. Little did he know, they become addicting. A little later that night I heard some wax paper rattling and I asked him what he was doing and he said, Man, these are SO good! (: So I definitely reccomend trying this recipe.

Saturday morning we woke up early and I was once again in the baking mood. I made some strawberry cheesecake muffins for breakfast. Then, I had been eye balling Brown Eye'd Baker's recipe for Homemade Granola Mix. I'm such a big granola girl and had always wanted to try my own recipe. When she posted this post Needless to say, I definietly suggest you try it (:

B2B

Back to baking..

I've been gone for awhile and busy with so many different crisis, but thankfully I'm back. I haven't been backing very much until this week. I don't have any pictures b/c I forgot to take some but I made some lemon bars for my sister on Monday. She absolutely loves lemon.(eh)

Then last night I got the urge to bake and went looking through the pantry and decided to make brownies. Not just any brownies though. I followed the recipe on the box and mixed it together(adding walnuts and chocolate chips). Then i scooped out a layer into my pan, with another layer left in the bowl. Then i got out my nutella and add a few spoon fulls to the middle of the mixture and topped it with the rest of the brownie mix. I baked as normal, actually a little longer and when i took the brownies out I added miniature Hershey bars, square by square to the middle of the brownies for an added gooey-ness!! YUM!

These brownies turned out delicious. They took a little longer to bake but my husband was in awe!!

So next time you get a craving for brownies..try this ; )

The weather outside is frightful..

but the fire is delightful! It's snowing/sleeting in my neck of the woods and it's awesome. The ice we could live without, but what's TX without an ice day once or twice a year. We got two in a row (: I'm loving it!

Anyways, I've got a quick recipe that is mindless, that the husbie & i have been enjoying this winter. It's almost an every night thing. Which is good and bad.

It's microwavable SMORES!

Who doesn't like smores! I'm not big on marshmallows, but you put them with chocolate between a graham cracker and I'm all for it!

Microwavable Smores

1 Sheet of Graham Crackers(4 rectangles)
1 mini sized Hershey's bar(we've used bite size twix, snickers, etc.)
1 big marshmallow

take the sheet of graham crackers. break them in two. Then put two rectangles of chocolate on one side, top with the marshmallow and then put the other rectangle of chocolate and then heat it up for about 10 secs or until the chocolate is just lightly melted. Make sure if you have kids that you let them stand at the microwave and watch. It's my husbie and I's favorite part. The marshmallows get HUGE! Lastly, top with the other graham cracker rectangles and enjoy!

*Bonus*
our walmart is now saling these JUMBO and i mean jumbo marshmallows. My husbie and I are going to try those next. They just might explode in the microwave.

Prayers..again..please.

Man, has this new year been crazy or what. I started it with my bff and her son going to Heaven and then this past Sunday my dad went to the hopsital for what we thought was a virus.

Turns out. My Daddy has such a bad virus it had completely dehydrated him to the point where he had NOTHING, not a thing in his system and everything was shuting down on him. You talk about words you never want to hear. His kidneys were failng and his blood pressure was out of control. He had developed pneumonia and was to the point where if we would have waited another minute to bring him in, he probably wouldn't still be alive. Thankfully we serve an awesome-healing God and my dad is doing a lot better. After being sedated with a ventalator for 3 days. I cried every single time I went in his room. To see your daddy lying in a bed helpless, with a tube down his throat and asleep. I can't breath even now thinking about it.

I just wanted to fill y'all in a little bit about what was going on and ask that you pray for my Daddy's recovery. I'm a strong believer in prayer. That's what saved my Daddy's life is our sweet, sweet Saviour. I pray that my Dad's heart stress test goes well, and that he can get some relief from his back pain. My dad is medically retired, due to a severe back problem he has had his whole life but got worse as he got older. He's still very young and I just want this all to get passed us and for him to be 100% better in no time.
